Soup is the best way to stay warm during cold and windy autumn and winter. This is my fauvorite ayurvedic and vegan soup that will keep you warm and grounded during this windy weather.
Ingredients
- 1 large onion chopped
- 4 large carrots
- 1 sweet potato
- 1 litr of vegetable stock
- a bunch of corriander
- fresh ginger
- 2 Tbsp of olive oil
- 1 Tbsp of masala spice mix (please adjust according to your dosha)
- 2 Tbsp of ground corriander
- 1 tsp of marjoram (optional)
- pepper & salt (optional)
Method
Heat the oil on the pan and add the masala spice mix and ground corriander. Add the onion and cook for few minutes, adding the marjoram (optional). In the meantime peel and chop sweet potato and add to the onion. Saute for few minutes.
Move all the vegetables to a large soup pan and add vegetable stock. Cook on low heat until carrots and potatoe are soft. Then puree using hand blender and add 1 tsp of ground fresh ginger (or more if you wish). Simmer for few minutes and add chopped corriander and blend it again. Finally add pepper and salt to taste and serve sprinkled with toasted pumpkin seeds.
