Health Treats From Karen Edgington

“When I quit sugar I started desperately seeking healthier alternatives to give me my sweet fix! This is one of those indulgent recipes that no one will guess is refined sugar free and full of nutritious ingredients. The honey will still give your blood sugar levels a hit though so it’s not something to be eaten every day, but it’s rich, fudgy, smooth and yummy – and the bonus is it’s quick to throw together!”

So what’s so good about them?…

pexels-photo-24311The hidden gem in this recipe is avocado. Avocado is an incredible fruit that contains over 20 different vitamins and minerals, and is packed full of fibre and healthy fats. It is high in monounsaturated fatty acids and can lower bad cholesterol. It gives the chocolate pot a wonderful creamy texture. We could all become more healthy by eating avocado every day. It’s a true superfood.

pot-kitchen-cutlery-beesRaw organic honey is the good stuff. Yes it costs more than the honey that dominates our supermarket shelves but it is not heat treated, pasteurised, processed or blended with other sugars like that honey so it retains its incredible health benefits. It contains over 80 nutritional components and has one of the highest level of living enzymes in any food, boasting numerous health benefits such as antibacterial properties. Play around with the recipe to reduce the honey content as much as possible to your taste to maintain blood sugar levels.

Cocoa, so long as it’s unsweetened, can give some great health benefits too. Unfortunately that doesn’t mean we can all reach for the Dairy Milk though! Raw cacao is best but is a tad dear. Its cheaper counterpart, cocoa, still delivers the same nutritional elements but they are slightly lessened by the heat treatment it will have received. It can help lower blood pressure and is rich in antioxidants and minerals such as iron and magnesium. Chocolate can be really good for you. Hurrah!

A quality sea salt is full of 60 different minerals and electrolytes and helps us stay hydrated.

berries-184449_640Every element of this chocolate pot nourishes your body (as well as your mind!). Top it with full fat Greek yoghurt and berries to make it even better. Or finely grated orange zest would work well too! I serve it in little expresso cups. You don’t need a lot as it’s so rich. Tastes gorgeous when it’s still warm too. In fact I think I like it even more when it’s freshly made rather than chilled! Enjoy…
